  • 1 cup chopped dates
  • 1 teaspoon baking soda
  • 1 tablespoon butter
  • 1 cup boiling water
  • 1 egg
  • 1-1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 5 bananas (sliced)
  • 2 cups whipped cream


Combine dates, baking soda, butter and boiling water into a bowl; mix well. Let stand until cool. Add egg, flour, sugar and vanilla extract; mix well. Spoon into a 9x13-inch baking dish. Bake at 350 F for 30 minutes. Let stand until cool. Cut into small pieces. Toss with banana slices and whipped cream in a bowl.

Makes 10 to 12 servings.
