Ingredients and Directions

  • 1 pound ground beef, browned
  • 1/2 pound ground sausage, browned (or sausage rope, cut up in small pieces)
  • 4 to 5 medium potatoes, cubed and pre-cooked

Mix together. In a separate bowl, mix together:

  • 2 eggs
  • 3/4 cup milk
  • 2 stalks celery, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 cups bread cubes (Marlene adds saffron, minced onion and poultry seasoning, to taste)

Add to meat and potatoes. Mix together. Pour into casserole dish. Cover with:

  • Cream of mushroom soup

Cover. Bake at 375 F for 1 hour or until done.

This is a hearty dish and very filling, and not so rich. It’s hard to believe we’re entering the month of June already. But I look forward to the June dairy recipes. It’s always fun trying new recipes. I am always looking for quick and easy recipes to fill the four men that come to the table. But my daughter and I also enjoy the delicious time-consuming recipes that we take the time to make, more often in wintertime. With milking around 60 cows, farming rye, tobacco, hay and corn, it keeps everyone busy year-round. I look forward to the fresh fruit and vegetables in their due season.
