•  3 egg whites
  • 1 pint cream
  • 3 egg yolks
  • 1 cup confectioners’ sugar
  • Graham crackers 


Beat together egg whites and cream until stiff. In a separate bowl, beat egg yolks and sugar. Then add to cream mixture. Put a layer of graham crackers in pan. Then put in filling and another layer of crackers on top. Freeze.

This tastes like homemade ice cream. It’s very quick and easy to make. It’s also good with chocolate drizzled over the top. We live on a dairy farm in central Pennsylvania. We have approximately 75 registered Holstein cows and just as many heifers, quite a few horses, laying hens and, of course, our dogs. One of our main helpers just left us, Amy, the old farm dog. She is greatly missed. Our son, Luke Andrew, is now 8 months old and loves being in the barn with the animals.
