Ingredients and Directions

  • 1 (1-pound, 4-ounce) can pineapple chunks, drained and halved

  • 4-1/2 cups mixed fruits

  • 2 cups miniature marshmallows

  • 16 whole maraschino cherries

  • 1/2 cup whole pecans

Note: For mixed fruits, you can use a combination of bananas, sweet cherries, strawberries, blueberries, grapes, blackberries and peaches. For dressing, combine the following in a food processor until smooth and then pour over chilled fruits:

  • 8 ounces softened cream cheese

  • 1/2 cup mayonnaise

  • 1/3 cup confectioners’ sugar

  • 1 thin slice unpeeled orange, quartered

  • 1 pint heavy cream, whipped and folded into above.

Spoon mixture into a foil-lined 9x5x3-inch pan and freeze. Thaw slightly in refrigerator before serving, or pour mixture into a 9x13-inch pan and freeze. Serves 12-16. E
